Roasted Leg of Lamb

A leg of lamb is a beautiful addition to any dinner table. We love ours with Greek Seasonings, simple and delicious.

Ingredients

  1. Preheat oven to 450
  2. Mix herbs, salt and pepper together in a medium dish
  3. Add in oil and gently mix together
  4. Slice the garlic cloves into small slivers and mix in with the herbs and oil
  5. Cut 15 - 20 small slits in the leg of lamb and place the spiced garlic cloves into the slits
  6. Rub herb mixture all over the surface of the leg of lamb, pushing some into the slits
  7. Place leg of lamb on rack in center of roasting pan and place in the preheated oven
  8. Cook for 15 minutes at 450 degrees and then lower the heat to 350 degrees. Cook at 350 degrees for 1.5 hours or until the internal temperature reaches 130 - 140 degrees. Temperature will rise by about 5 degrees as it rests when taken out of the oven.
  9. Remove from oven and test with an instant read thermometer. Lamb is considered done anywhere between 130 - 140 degrees. Cover with aluminum foil and let rest for 10 - 15 minutes.
  10. Slice into thin slices and serve.

Notes

Lamb is delicious without a lot of fuss and added ingredients. It would also be good served with a Greek Lemon Sauce or a mint jelly. A lower temperature makes the leg of lamb even more tender so feel free to adjust temperature and time if you'd like to.
