PrintWith ImageWithout ImageCheesy Chicken SpaghettiYield: 8 - 10Author: Leslie MorganPrep time: 20 MinCook time: 20 MinTotal time: 40 MinThe perfect dish to use up leftover chicken.Ingredients1.5 - 2 lb. shredded chicken (I just use leftover chicken for this dish)2 teaspoons Italian seasoningsalt & pepper to taste4 tablespoons butter1 small onion, diced4 cloves garlic, diced8 oz of spaghetti or any thin noodle you have on hand1 cup of peppers (jalapenos, bell peppers, or mix them up)1 cup diced tomatoes1/2 cup diced green chiles2 - 3 cups shredded cheeseInstructionsPreheat oven to 425 degrees.If using raw chicken, season chicken with Italian seasoning, salt & pepper and cook thoroughly.Heat the butter over medium heat and sauté all of your vegetables, tomatoes, peppers and chiles until tender.Add in cooked chicken and mix ingredients together.Cook your noodles according to the package instructions.Mix your noodles into your chicken and vegetable mixture until thoroughly combined.Transfer noodles and chicken mixture to a 9x13 casserole dish.Top with shredded cheese.Bake uncovered for 15 - 20 minutes until cheese is melted and everything is heated through.Allow to cool for a few minutes before serving.All rights reserved for Mackadoo Farms
